Yay! I finally found a recipe for cookies that my family loves. These Almond Butter Chocolate Chip Cookies, tweaked from a recipe by Angela Liddon are the perfect gluten free cookie. Well they love any cookie really but I rarely bake them and never buy them so this was a real treat for them. I found this recipe in the amazing book Oh She Glows by Angela Liddon. I made few tweaks to it but essentially it is the same one.
If you needing to avoid wheat and grains these cookies will definitely hit the spot, they are soft, slightly crunchy and full of flavour without being too sweet. You can also play around with the ingredients if you didn’t want to add in oats you could substitute do them completely with almond flour. Or you could try a number of nut butters depending on what you like, try cashew or sunflower seed etc.
Its back to school so that means lots of banana bread in the works, we don’t eat a lot of grain here, especially wheat so this is the perfect recipe for our family. You can of course choose other dry ingredients such as spelt flour but the consistency wont be quite the same. Here is my best ever paleo banana bread recipe and you wont believe that it contains no added sugar at all, that’s right, no sugar!
All the sweetness comes from those very ripe bananas that you were going to throw out for looking too brown! I love how moist this particular recipe is, its the perfect way to enjoy a sweet treat without all the extra sugar or grains. You can also play around with this recipe and add in nuts, I would suggest pecans or walnuts for added essential fats. You can also substitute the butter for ghee or coconut oil to get a great supply of MCT (medium chain triglycerides).
As Valentines Day approaches I need to make sure my boys have alternative snacks to take to school. I was looking for a simple treat that I had all the ingredients for and I decided that healthy rice krispie treats would be a fun option.

If it was harder than you thought, or you didn’t quite manage to make it as healthy as you could, keep trying, you will get there, trust me.
